I'm pretty sure the pan on a 327/340 should be a five-quart pan.
Total oil capacity (5 in the pan, 1 in the filter) was six-quarts...as opposed to base engines which had 4 in the pan and 1 in the filter.
Same pan was used on a lot of high-performance small-blocks in addition to the 327/340 such as: 327/350, 327/360, 327/375, 350/330, 350/350 and 350/370.
