"Agreed Value" policies are what you are looking for - may, or may not be through a collector car insurer...

I use State Farm with a Stated/Agreed Value on the policy of $60K (which was reflected by an appraisal). My 3 collector cars have stated values on their policies. I use them on all my property and have found them to be quite good to me.
