Which Paint To Use To Detail Under Hood etc

I want to paint the under side of my 81 Hood, it is currently black. I am not sure if it is flat,semi gloss black. Also, I want to paint the rear exhaust pipe . I am not sure if it is aluminum or stainless paint. Its the pipe that crosses over from right to left I want to do it by the BOOK. I appreciate your help. Thanks, Rollsman

I am sure there are folks far more qualified to answer that question on this forum, but I believe that there should be a "heat shield" covering the underside of the hood. I had always assumed it was stock equipment for my 81 Vette.
It looks like padded tin foil, and I assume it keeps the heat from transferring through the hood to the paint on the outside. Without it I had always believed there was a possibility of damaging the hoods paint. Perhaps I am mistaken, hopefully someone else will post a reply and elaborate further.
