The LS1 and LS6 both use some oil. The amount varies with the engine, engine speeds, etc. Using a quart between oil changes would not generally be considered abnormal. There were some early LS6 engines (in Z06's) that used well over 1 quart per 1000 miles. The rings were redesigned to decrease the oil consumption.
